How to configure form action ?

I apologize for the late reply. Currently, you can't configure form action. At this point, the form from on published site collects data from the fields and sends it to your email. For this, you'll need to provide a valid and existing email. That's all 🙂
Also, you can always use 'Code' element to insert some form from external services, where you can customize actions.
Could you please share more details of your idea with us? What type of action do you want to configure for the form?

My idea is really simple, Graphite let me create lots of projects, so I can imagine I've differents address mail, one per project. Currently, my Graphite account is registered with personal email but I believe I can have a personnal website (which use my personnal email) and professionnal website which can use an other email address.
But when I read your reply it seems it is not possible at the moment.

Thank you for the details. Indeed, at this point there's no way to customize the email field. But, I've already forwarded this to the development team to be taken into consideration for future updates so, hopefully, we'll see it soon.
